Sugar syrup
Orgeat syrup
Single cream 15% fat
Crushed ice
Prepare an almond emulsion with an orgeat syrup base (3/4 orgeat syrup to ¼ single cream 15% fat). Mix all ingredients with the crushed ice in a Blender. Serve the drink in a Martini glass. Place the almond emulsion in the centre of the glass using a siphon. Garnish with a sprig of mint and cover the entire concoction with a small glass cover.
