Bergeron Apricot Frozen Compotée
Maison Ponthier has chosen Bergeron apricots, grown using sustainable farming methods in the Drôme des Collines region, for their tangy flesh, bright colour and rich aroma.
Made from carefully selected fruit, this compotée is the result of a gentle processing method designed to preserve the qualities of the fresh fruit. Its generous, nostalgic texture, rich in melt-in-the-mouth pieces, is reminiscent of homemade preparations.
Ready to use, it is perfect for a wide range of applications: fillings, plated desserts, tarts, ice cream or pastries.

Following thawing, homogenise using a spatula.
After light homogenisation, the compotées can be used directly in verrines, to marbelise a mixture, sorbet or ice cream. For other applications such as gelatinous inserts, they will need to be textured hot or cold.
