Maison Ponthier has carefully selected the Willamette variety of raspberries from Serbia, sourced from partner producers who cultivate their fields at altitudes between 600 and 1,000 metres. These producers have a lower yield per hectare but produce fruit with a more pronounced, tangy and fragrant flavour, as well as a higher Brix level. In fact, growing them on slopes prevents stagnant water and is ideal for raspberry bushes, which dislike humidity and require well-drained soil. To remove any bitterness, the seeds are removed during the production process of the purée and coulis, which contain only the fruit flesh.
