Grown in family orchards that have been cultivated for several generations, the purple figs selected by Maison Ponthier express all the richness of the Provençal terroir. Sun-kissed, they reveal the fresh, delicate notes typical of this exceptional fruit. Made from carefully selected raw materials, this compotée is gently processed to preserve the qualities of the fresh fruit. Its rich and indulgent texture, enhanced by generous pieces of fruit, makes it a delicious and structuring ingredient. With a 100% natural composition, this compote is perfectly suited to inserts, entremets, tarts, plated desserts or verrines. Following thawing, homogenise using a spatula.
After light homogenisation, the compotées can be used directly in verrines, to marbelise a mixture, sorbet or ice cream. For other applications such as gelatinous inserts, they will need to be textured hot or cold.
