For its papaya puree, Ponthier has selected the variety Carica from Costa Rica. Thanks to a light, airy and well-drained soil, the trees give firm, orange-coloured fruit that are very fragrant, juicy and quite sweet. Papaya is fragile and requires great care and attention when processing. Being a fragile fruit, papaya is still not consumed much in Europe.
