Violet Fig Frozen Puree

Maison Ponthier chose the violet fig as it has a great many assets for purée processing: a pretty violet colour, good size, bright red flesh with small pips and an exceptional freshness on the palate. The fig tree needs daylight and hot weather. Given how late the fruit ripens, it is only grown in the south of France where autumn is hotter and longer. The Provence region has all the properties that has enabled the fig tree to fulfil its great potential: dry, fertile and slightly chalky soil.
