Hand-picked, the fruits are processed quickly to preserve their freshness and aromatic intensity. This compotée has a smooth, melt-in-the-mouth texture, combined with the deliciously tangy and fruity notes typical of raspberries. Its deep pink colour evokes both indulgence and naturalness. Made with carefully selected raw materials and using a gentle processing method, this 100% natural recipe respects the identity of the fresh fruit. Following thawing, homogenise using a spatula.
After light homogenisation, the compotées can be used directly in verrines, to marbelise a mixture, sorbet or ice cream. For other applications such as gelatinous inserts, they will need to be textured hot or cold.
