Willamette Raspberry Frozen Compotée
Maison Ponthier has selected Willamette raspberries, grown at high altitude in the heart of Serbia by committed family farms. These fruits are harvested by hand and processed immediately after picking to preserve their freshness and aromatic intensity.
The compotée has a juicy texture, enhanced by the natural crunchiness of the seeds, for a lively and authentic taste experience. It reveals a fruity and refreshing flavour, typical of this variety with its tangy profile.
It is ideal for fillings, desserts, ice creams, tarts or verrines. A gourmet solution that is technical and faithful to the requirements of professionals.

Following thawing, homogenise using a spatula.
After light homogenisation, the compotées can be used directly in verrines, to marbelise a mixture, sorbet or ice cream. For other applications such as gelatinous inserts, they will need to be textured hot or cold.
